healthy pancakes for yummy kids
Since my little vegetarian Thumper can’t tolerate cow’s milk protein, his pediatrician recommended I work some blackstrap molasses into his diet. Yesterday I made him some oat banana molasses pancakes and they were a huge hit. He especially likes them cold as a snack. And I think they’re pretty tasty too. No photo because we already ate them all!
Note, this isn’t a vegan recipe. Thumper and I do eat eggs. Any suggestions for an egg subsitute for those vegans out there?
1 3/4 cup rolled oats
1 cup whole wheat flour
1/4 cup blackstrap molasses
1 tsp baking powder
2 eggs
1 1/3 cups soy milk (or you could use cow’s milk)
1 banana
Grind oats in a food processor. Mix with flour and baking powder. Beat
eggs and milk together and add to flour mixture. Mix in molasses.
Break banana into small bits and mix in. Beat well.
Makes 12 small pancakes, just the right size for a chubby little hand to hold.
PS: THANK YOU for all the birthday wishes for Billy yesterday! Tomorrow night I’m taking him out for our first date since Thumper was born. My mom will be babysitting. The baby’s never gone to sleep without me there to nurse him down, so I suspect we might be coming back home to an angry, awake-but-exhausted little guy and a frazzled gramma. Then again, maybe it’ll go fine. My mom can walk him down for naps, so why not for night time? Oy vey. Wish us all luck!
Yum! Have a good time. He’ll probably be so thrilled that he gets to hang out with gramma that he won’t notice you’re gone. (Try hard not to show your disappointment if Gramma says he was a little angel and had a good time!)

The recipe sounds yummy, but I was really hoping for a photo of Thumper mowing through a pancake, because cute babies making a mess is extra cuteness. Bob’s Red Mill has some tips on egg replacers:

We use Ener-G egg replacer in pancakes and waffles all the time, and it works great. We are vegetarian, not vegan, but I always keep this on hand because it stores easily and keeps for ages, so I never have to worry whether or not I have eggs for baking. My 21-month-old is a big pancake fan – she sits on the counter and helps stir the batter when we make them every weekend. Our favorite recipe is on the back of the Bob’s Red Mill Scottish Oatmeal package, but I think we’ll have to try this one next, especially since the girlie and I both tend toward iron deficiency – this looks like a good use for blackstrap molasses. Thanks!

There are a couple of different egg replacers that I like to use for cookies are either flax (1 tbsp ground flax mixed with 3 tbsp warm water) or extra baking powder (add one extra 1/2 tsp baking powder, plus 2 tbsp warm liquid per egg).

What does not eating dairy have to do with molasses? What vitamins/minerals does molassess have? I am curious as my nephew (he is 7) has a milk allergy and his mom has osteoporosis (she’s 35 with the bones of a 65 yo).

As soon as I read that title, I wanted to switch it up: “healthy kids make yummy pancakes”. We’ve always played a game with our kids that they were so sweet, we just want to gobble them up. Certainly Thumper looks throughly chompable.
Enjoy your date! My suggestion is to designate a specific time for one phone call home to see how things are going with grandma. Then you can relax because you know what to expect and don’t constantly think “should I call?”

Have you tried goat’s milk? A neighbor of mine raised her kids on it because they are both allergic to cow’s milk and soy milk. I have no idea why goat’s milk is any different, but apparently it can be tolerated when the others aren’t. May be worth a look-see.

Hi, I haven’t ever commented but love your blog. It’s the cat that’s making me write.
Has your vet mentioned Chlomipromine? (spelling is I’m sure way off) Our cat wasn’t 100% cured but it helped –it’s an anti-anxiety –he was on it for a year or so after a move, baby, etc.
Good luck to you with the move and the cat!

Diana at Bestitched is allergic to eggs and is also a fabulous baker–she uses a vegan egg powder substitute that I’ve seen at Whole Foods. I’m blanking on the name right now, but it’s in a cereal-box-sized box and is pretty much the only one I’ve seen. Although I’ve not been lucky enough to taste her baked goods, I believe her when she says it works very well.
Have you seen Manna Bread? It’s a yeastless vegan bread sold in the refrigerator case of health food stores, and Jacob *adores* it. Lots of flavors, but his favorites seem to be the carrot-raisin and the cinnamon-date. Just apropos nothing. 🙂

You can use applesauce or mashed banana instead of eggs. I make really yummy pancakes using almond meal, soy milk, oil, flour, cinnamon, nutmeg, lemon juice (to make the soy milk sour), and maple syrup; it’s based on a recipe from a vegan cookbook. Exact amts. are at home, but I could share it with you once we’re back, if you’d like.

I’ve found with all 4 of my kids…I have the harder time than they do leaving. They get busy and hardly know you are gone!! I on the other hand always fret about them and feel like they must be screaming etc. But..nope. :o) In a weird way I always feel a little snubbed by that! They didn’t even miss me?!?! How dare they!!!! LOL! Can’t win either way can we?

Sesame seed butter (tahini) has tons of calcium. So, dips and sandwiches with tahini are a staple in our house :).

I used to mix pureed (baby food) squash or sweet potatoes into pancakes when my kids were small, for a bit of extra veg. No one noticed for years, but then again, how would they know that pancakes weren’t supposed to be a little orange?
